I'm a girl who likes to garden. This is kind of surprising given that in the first week after I got married seven years ago I burnt macaroni and cheese. The microwaveable kind. And now we grow our own food and I make meals from scratch. It's like I grew up or something.
One of my go-to herbs to grow is Basil, mostly because I use it in a ton of recipes. All you have to do is take the lid off and stick it in the dirt. I tend to grow a few windowboxes full of basil because I use so much of it. My favorite staple is Basil Pesto, which takes minutes to make and can go over pasta for a super quick meal.
I just pluck a handful of fresh basil leaves, rinse them off and throw them in the food processor. I add some olive oil, pine nuts, a smidge of garlic and some grated parmesan cheese. I just eyeball it based on how much pasta I am making but here is a great basil pesto recipe with, you know, measurements and stuff.
