Earlier this week we had a playdate and one of our friends brought over these no bake energy bites to share. They are seriously the best little energy bar bites I have ever had, so much so that we made our own batch the very next day.
This batch is for family only. Obviously.
I mean, it wasn’t supposed to be but I did not see that whole “dunking head in the bowl” thing coming.
Scarlette calls these little bites “recipes” because when my friend Sheena was leaving she said “I’ll send you that recipe.” So now when Scarlette asks me for one, she says “Mommy, can I hab one ob dose recipe bites?”
The full recipe is here via Smashed Peas & Carrots, and we made just a few alterations.We left out the coconut flakes because let’s be honest, who even likes coconut flakes? I only like my coconut flakes fried onto shrimp. Otherwise I am all “who shredded up tiny pieces of tissue paper in my food?”
In place of the coconut flakes we added 1/2 cup of vanilla granola, 1/2 cup of wheat germ and 1/4 cup of cocoa. We were out of chocolate chips so I chopped up a dark chocolate almond bar instead and I have to say that I loved it with the almonds.
Honestly, I have made a ton of variations on these things over the past couple of years in order to get some more protein/flax seed in Scarlette’s diet and everyone in my house unanimously agreed that these are by far the best. ♥ Scarlette and I snack on them during the day and J takes them to work with his breakfast. I mean, they don’t look beautiful but they taste great.
